Mango Madness Salad Recipe

This is the craziest thing I’ve ever concocted.  It turned out absolutely delicious and is a very light and healthy summer salad.  Try it yourself!

Mango Madness Salad:  Ingredients

  • 1 mango (peeled, pitted, and thinly sliced)
  • 1/2 cucumber (mandolin sliced)
  • 2 carrots (mandolin sliced)
  • 2 scallions (finely chopped)
  • 2 cloves of garlic (finely chopped)
  • 1 inch of ginger (peeled and finely chopped)
  • 3 tablespoons rice wine vinegar
  • 1/2 tablespoon extra virgin olive oil
  • 1 package organic shirataki noodles, prepared according to directions
