This is the craziest thing I’ve ever concocted. It turned out absolutely delicious and is a very light and healthy summer salad. Try it yourself!
Mango Madness Salad: Ingredients
- 1 mango (peeled, pitted, and thinly sliced)
- 1/2 cucumber (mandolin sliced)
- 2 carrots (mandolin sliced)
- 2 scallions (finely chopped)
- 2 cloves of garlic (finely chopped)
- 1 inch of ginger (peeled and finely chopped)
- 3 tablespoons rice wine vinegar
- 1/2 tablespoon extra virgin olive oil
- 1 package organic shirataki noodles, prepared according to directions
