Cabbage Soup with Beyond Organic Beef & Cheddar Sausage

cabbage soup with beyond organic beef & cheddar sausage bowlI had a beautiful head of purple cabbage in the fridge and no idea what to do with it. I’ve already made purple cabbage Suerokraut and a meatless purple cabbage soup, so I wanted a new idea. After a little online perusing, I found a couple recipes, and then concocted my own creation. This soup is full of flavor and I didn’t even add a teaspoon of salt! It’s a very healthy recipe that left us feeling full, but not sluggish. Enjoy!

Cabbage Soup with Beyond Organic Beef & Cheddar Sausage Ingredients

  • cabbage soup ingredients1 package of Beyond Organic Greenfed Beef & Cheddar Sausage
  • 1 small head of purple cabbage, chopped (I actually used 3/4 of a small head and left the rest for pureeing into a yummy baby food for Samantha)
  • 1 small onion, diced
  • 3 cups low sodium organic chicken broth
  • 2 cups water
  • 1 large can (or 2 small) organic diced tomatoes
  • 1 pinch of organic garlic powder
  • pepper and/or dried pepper flakes for heat, to taste

Cabbage Soup with Beyond Organic Beef & Cheddar Sausage Recipe

  • cabbage soup with beyond organic sausageAdd 2 cups chicken broth to a large stew pot and bring to a boil
  • Add chopped cabbage to pot and cook about 10 minutes
  • Meanwhile, brown Beyond Organic Beef & Cheddar Sausage in a sauté pan cooking about 5 minutes
  • Add onion to sausage and continue browning about 5 more minutes
  • Add water and tomatoes to stew pot and lower heat to medium
  • Add onion and sausage to stew pot and taste
  • Add additional cup of chicken broth or more, depending on how thin/thick you like your soup
  • Add some flavor (garlic powder, pepper, pepper flakes, etc.) to taste
  • Serve and enjoy!
