bowl of sweet peppersThe Windermere Farmer’s Market offers a lot of exotic deliciousness each week including today’s treats: dragon fruit and sweet peppers. The friendly produce dude at the Windermere Farmer’s Market, John, hooked me up with a spaghetti squash, a huge bag of sweet peppers, and a beautiful dragon fruit.

Paul and I came home from our Beyond Organic booth this afternoon and we were starving. I quickly threw together this lunch and it left us satisfied, light on our feet, and full of energy. I hope you’ll replicate it and enjoy!
