Cheesy Chili Beyond Baked Potatoes

Cheesy Chili Beyond Baked PotatoesThis is a Smith House favorite. It’s so easy! So delicious! So quick! And super healthy. It meets all of this mama’s requirements, so I’m sharing it with the rest of you. Bon appetit!

Cheesy Chili Beyond Baked Potatoes

  • Clean, poke, and bake your potatoes at 375 degrees for an hour or more, depending on size. (I baked mine for a good 80 minutes).
  • Cut them open, and slather with organic pastured butter, Beyond Organic shredded cheese, chili (which you can make from scratch… or heat from a can like this cheating mama did — Amy’s organic chili is our favorite), add more shredded cheese, and enjoy.
  • Serve with vegetables to make mom proud. We had a fresh tomato salad that was refreshing, sweet, and savory all at the same time. Yumm-o!

Samantha ate my leftovers the next day, so once again, I’m throwing this recipe in the toddler category. It’s so good!

About jenni smith

Jenni Smith is a recovering fast food addict and a reformed couch potato who swore she'd never be a distributor... until the day she realized the only thing holding her back from reaching her true potential was her own stubbornness. And maybe a bit of fear. When she finally decided to put on her "big girl pants", Jenni (and her rock star husband, Paul) went from founding distributor to top earner in two years, and is now a Youngevity Vice Chairman Marketing Director. With a 15-year career in marketing and two little girls at home, Jenni raises her kids and her family's income at the same time and is passionate about coaching anyone who has: A) a desire for better health; B) a need for better wealth; C) patience for sass.
