Cheesy Chili Beyond Baked Potatoes
- Clean, poke, and bake your potatoes at 375 degrees for an hour or more, depending on size. (I baked mine for a good 80 minutes).
- Cut them open, and slather with organic pastured butter, Beyond Organic shredded cheese, chili (which you can make from scratch… or heat from a can like this cheating mama did — Amy’s organic chili is our favorite), add more shredded cheese, and enjoy.
- Serve with vegetables to make mom proud. We had a fresh tomato salad that was refreshing, sweet, and savory all at the same time. Yumm-o!
Samantha ate my leftovers the next day, so once again, I’m throwing this recipe in the toddler category. It’s so good!
