Raw Vegetable Tacos with Avocado

vegetable tacos with avocadoWe eat a lot of salads in the Smith House. Especially kale salads. They’re easy, filling, and we feel lean and happy after eating them–not to mention they taste great and are super healthy for us. But enough about salads.

Sometimes, you just want something a little…messier. You know–something that’ll get your hands dirty. Are ya picking up what I’m putting down? (It’s not a sandwich, so if that’s your guess, you’re wrong.)

I’m talkin’ TACOS, people. A rolled up version of a sandwich that’s got stuff, well, stuffed into it.

You can mix n’ match your own vegetables to create your own special taco du jour, but here’s what I did:

Raw Vegetable Tacos with Avocado Recipe

Pile each sprouted grain tortilla high with:

  • 1/2 avocado, sliced into heavy chunks
  • 2 slices red onion, diced
  • 2 small sweet peppers, diced
  • 1 small handful of clover sprouts

Then, drizzle over extra virgin olive oil and a squeeze of lemon, and enjoy!
