Beyond Organic Hot Dog Stir Fry with Organic Eggplant and Kale

Beyond Organic hot dog stir fry dinnerIt’s been a while since I posted a recipe, hasn’t it? I’ll share our dinner from a few nights ago because it was so easy, delicious, and healthy.

We always keep Beyond Organic Hot Dogs in the freezer because they thaw quickly, have great flavor, are easy to prepare, and they offer a great CLA and Omega-3 boost.

The eggplant and kale came from my new favorite produce people: Spacegirl Organics. Their produce is always fresh and offers such great variety.

I skinned, cubed, steamed, and pureed half of the eggplant for Samantha, which left Paul and me with plenty for slicing and eating with dinner.

Give this meal a try (or swap out any veggies for whatever you can find in season) and bring a smile to your family’s face when you say, “Dinner’s ready!”

Beyond Organic Hot Dog Stir Fry Recipe

  • Beyond Organic Hot DogsIn a large pan, sauté your onion (and garlic, if you like) in a bit of oil (coconut, if you have it) and sprinkle with a little salt and pepper.
  • Meanwhile, slice your hot dogs (I slice lengthwise, quarter turn, and lengthwise again, then–keeping the dog in its original shape–cut widthwise into thirds).
  • Add the hot dogs to your onions and stir over medium heat for a few minutes.
  • Add ketchup, mustard, and Bragg’s Aminos to taste. (I don’t measure anything, but I’m guessing it’s about 1/4 cup ketchup, 1/8 cup mustard, and 1-2 tablespoons of Bragg’s. Pictured here, I went a little heavier on the mustard and used less ketchup. I liked it just as much, but it was distinctly different. I even added a splash of beer because I was trying to use up the mustard bottle and there was so much sticking to the sides that I didn’t want to waste, so I unscrewed the top, added a splash of beer, shook it, and squirted it into the pan. Delicious!)
  • Heat thoroughly, and enjoy.

Oven-baked Eggplant Ingredients

  • 1 graffiti eggplant, washed and cut into 1″ slices
  • 2-3 ounces Beyond Organic Raw Cheddar Cheese, finely grated

Oven-baked Eggplant Recipe

  • photo 5Grease a pan and/or brush each slice of eggplant with a little oil (I used organic sunflower oil, but coconut oil or EVOO would work fine as well).
  • Bake on 350 for 10-15 minutes.
  • Top with grated Beyond Organic Raw Cheddar Cheese. (Top EVERYTHING with Beyond Organic Raw Cheddar Cheese. Or the Raw Havarti. You’ll thank me.)

Organic Sautéed Kale Ingredients

  • 1-2 tablespoons of your favorite cooking oil
  • 2 teaspoons of minced garlic
  • 1 pound of kale, rinsed, de-stemmed, and cut into 1-2″ pieces
  • 2-3 ounces Beyond Organic Raw Cheddar Cheese, finely grated

Organic Sautéed Kale Recipe

  • Organic Sautéed KaleHeat oil on medium heat.
  • Add garlic and cook until the flavor begins to release, before browning.
  • Add kale and cook, uncovered, stirring frequently until wilted.
  • Top with grated Beyond Organic Raw Cheddar Cheese.

    ever dice the eggplant roast 20 mins add diced tomato roast another 15-20 mins.. add fresh basil and sprinkle w/ grated raw cheese of choice melt cheese and serve?
